Everytime I do a pork casserole meat is really tough, what am I doing wrong?

The problem may be in the quality of the meat you are buying, cheap pork can be over gristly and full of excess fat and water, whereas a leaner pork would be a much better option and far healthier, Try marinading the pork overnight in the refrigerator, this should help.
