What chocolate to use for dipping strawberries?

I'm going to be making chocolate covered strawberries but am stuck on what chocolate to use. I'm not using white chocolate as I don't like it I'll probably use milk chocolate. I hate chocolate that goes a bit rubbery and tasteless after it has gone solid again so which could I use that will still taste very chocolatey after being melted and hardened again?
